Happy first day of summer! Ever just want a big salad? Famous words from Elaine, on Seinfeld’s “The Big Salad” episode. That’s what I was craving. So I made a big Niçoise salad with salmon kabobs, drizzled with anchovy vinaigrette. Don’t be afraid of the fishes; they add the perfect saltiness and tang that this dressing craves. I will share with you this amazing anchovy salad dressing. It’s the game changer that will take your salads to the next level.

Anchovy Vinaigrette
Ingredients:
1/2 cup extra-virgin olive oil
2 tablespoons red wine vinegar
2 tablespoons freshly squeezed lemon juice
1 teaspoon honey
1 garlic clove chopped
3 good quality anchovies (I like these babies conservasortiz.com)
1 teaspoon Grey Poupon ( the only worthy mustard)
Kosher salt to taste
Fresh ground pepper to taste
Directions:
Toss all the ingredients, except the olive oil, into a blender or food processor. Pulse for 30 seconds. Slowly pour the olive oil in while the motor is running. You can store it in a cute mason jar in the fridge, or dip an entire baguette in this deliciousness (whoops that’s what I did).
